A kind of pickled (salted) vegetable, kimchi was born in Korea around the 7th century.

No kimchi is no life. I eat kimchi everyday but I always feel like it's my first taste. Kimchi has a lot of different tastes and I love every taste of Kimchi.

Mmm
I lived in Korea back in the late 80s and man do I love Kimchi. I was in elementary school at the time and all the Korean American kids would have their Korean meals, and I would trade them always, twinkies and ho-hos for kimchi and kimbop - if they'd let me. Kimchi and kimbop, mmmm, these days maybe have it with some OB beer.

Brings back great memories
We love Kimchi. After living in South Korea for 9 years we find Kimchi is not the only thing we miss. Sticky Rice, Nice COLD Kimchi, and Sushi.....lovely combination. We find Kimchi brings back great memories that will keep us going until we can return.

Makes everything taste better
Spicy, salty and crunchy - it's the perfect food. It just makes everything taste better. Add it to soups, a stir fry, or just eat it with rice. My Korean room-mate in college used to scramble eggs with it. I love the bold flavor and the fact that it is made with humble ingredients like cabbage. It's not for people who like bland food, but I urge everyone else to try it.
