    I've always enjoyed a good 'Lammy'. I even tried to make a batch for Canadian friends when I was in Abbotsford, BC but I quickly learnt it is easier to enjoy a lamington than to make one!

    Lucious lamingtons. The fluffy sponge cake, that rich chocolate coating and the coconut. Whether it's plain or filled with jam and cream, there isn't an Australian or Kiwi who doesn't love a good lamington. I hold them dear because as a student, I made hundreds of lamingtons at a part-time job. Now, as an Australian living in NZ, I am constantly having heated discussions with Kiwis about the origin of this fabulous treat. Of course, it was the Australians who invented lamingtons!
